The Wuliangshan Black-bone Chicken(Chinese:无量山乌骨鸡)is an excellent local chicken breed characteristic of Yunnan Province’s plateau region, originally native to the high-cold mountainous areas around the Wuliang and Ailao Mountains. Through long-term natural domestication and free-range rearing, it features a unique "all-black" appearance, extremely high nutritional and medicinal value, and strong survival instincts in the wild.
Physical Appearance
- Overall Plumage: The feather colors are relatively diverse, predominantly mixed, barred (Maoyu), or black. The feathers are compact, tough, and highly weather-resistant, perfectly adapted to the complex climate and outdoor activities in the high-cold mountainous regions.
- "All-Black" or "Mostly Black" Appearance: It possesses the representative characteristics of black skin, black meat, and black bones, with internal organs mostly dark in color, and the beak, shanks, and toes predominantly iron-blue or slate-gray.
- "Feather-legged" (Maojiao) Characteristics: The bones are thick and sturdy, with a wide and deep chest. Adult chickens generally weigh between 2.5 and 3.5 kg (5 to 7 jin). Because their shanks and toes often feature feathers (shank and toe feathers), locals often refer to them as "feather-legged chickens."
Quality Characteristics
- Extremely High Nutritional and Medicinal Value: The protein, calcium, phosphorus, and essential amino acid contents in its muscle tissue are significantly higher than those of ordinary breeds, while the fat content is low, giving it prominent medicinal and tonic properties. Its meat is tender yet chewy with rich umami compounds, and the chicken broth brewed from it is clear, sweet, and rich in flavor.
- Strong Environmental Adaptability: It exhibits extremely high tolerance, disease resistance, and vitality against the harsh climate and rough management conditions of high-altitude mountainous areas.
Behavioral Characteristics
- Strong Wild Survival Instincts: Robustly built, they are extremely agile when free-roaming in mountain forests, earning them the nickname "flying chickens."
- Strong Broodiness: The hens retain a strong natural brooding instinct, typically going broody 5 to 6 times a year under natural free-range conditions.
